It is such a pleasure when you meet with someone who speaks with such clarity and passion about something that you have a mutual interest in. And that someone for me today was Ndaba Dube, Restaurant Manager, at The Vineyard Hotel. Ndaba is also responsible for the wine portfolio at The Vineyard, is the champion of the wine-paired dinners and knows that he has the training and the understanding of the intricacies involved in offering a great wine selection that gives them the competitive edge.
We met to chat about Le Verre de Vin – the world-class wine preservation system. He was introduced to Le Verre de Vin when he joined The Vineyard Hotel eight years ago, as The Vineyard already had a system in place. Ndaba’s experience is that Le Verre de Vin adds value as it extends the shelf life of the wines. It also allows you to open many bottles of wine without any anxiety about waste – you can therefore sell a lot of wine by the glass, which is highly profitable.
Ndaba believes very strongly that one of the many benefits of having a Le Verre de Vin system in place, is that it supports them in taking their wine by the glass offering seriously – they are therefore able to take immense pride in being able to offer a fully-balanced wine by the glass selection. And what this means is that it offers guests an element of independence in making their wine choices.

He feels that by being in a position to offer such a wide selection of wine by the glass, that this allows the guest to be in charge if what they are consuming. It adds value to the experience as the guest can choose to have just one glass, or the guest can choose to have one wine and then change to a different wine, and any number of variations around that. It gives the guest a freedom about their wine choices without them feeling manipulated in any way.
Ndaba has watched the trend of wine by the glass growing. And with that he has experienced how it has increased wine sales. It therefore makes sense to find ways of extending your wine by the glass offering. And in supporting this trend, again it comes back to the guest being in charge of making their own decisions – and, what often happens is that the guest ends up trying more wines (sometimes more than a bottle) because they have the choice to do so – this freedom of choice has been key to the wine drinking experience offered at The Vineyard.

It is excellent for wine and food pairing. It allows them to have a much better offering than their competitors and with Le Verre de Vin it allows them to focus on freshness and value – important support for The Vineyard brand.
A further benefit is that it is easy to use and is very reliable and they have never had any challenges with the system in the eight years that he has been at The Vineyard.
When it comes to bubbly, Ndaba feels that the quality of preservation with Le Verre de Vin is impressive. He views bubbly as having a finesse of elegance and when you can extend the life of a bottle of bubbly and can still offer that bubbly elegance, even after preservation, then you gain even more.
On being asked why he would recommend Le Verre de Vin, Ndaba said that Le Verre de Vin has grown into a trusted brand. He also commented that having had it around for longer even than he has been at The Vineyard (more than 8 years), emphasises its quality and it’s reliability. In his opinion it attributes in complementing their offering – in being able to offer over 20 wines by the glass, it speaks volumes.
